Grilled chilli and garlic king prawns
I'm thrilled to share our tantalizing recipe for Grilled chilli and garlic king prawns. Cooking prawns on the BBQ can be a bit intimidating for some, but fear not, as I'm here to expertly guide you through the process with a series of tips and tricks that will guarantee your prawns are perfectly grilled, irresistibly juicy, and bursting with flavour.
Equipment
- BBQ or heavy bottomed frying pan
Ingredients
King prawn marinade
- 500 g large king prawns 15-20 per pound
- ¼ tsp bicarbonate of soda
- 1 tsp salt
- ⅓ tsp sugar
Chilli and garlic sauce
- 50 g unsalted butter melted
- 1 tbsp garlic minced
- 1 red chilli diced
- ½ tsp chilli flakes
- ¾ tsp lemon juice or white vinegar
- ¾ tsp mayonnaise
- ¾ tsp honey or brown sugar
- 2 tbsp parsley chopped
- ¼ tsp fish sauce optional
- salt to taste
Instructions
Marinating the prawns
- Peel and de-vein king prawns.
- In a bowl, add the bicarbonate of soda, salt and sugar to the prawns and mix well.The bicarbonate of soda and sugar helps with browning the prawns, which is essential to stop overcooking the prawns.
- Thread the king prawns onto two skewers and push the prawns close to each other. This step ensures the prawns don't overcook.
- Lay skewers on top of a bowl or an oven tray so they have air flow around the prawns. Refrigerate for an hour.This step helps to dry out the prawns resulting in a better char.
Chilli and garlic sauce
- Add the melted butter, garlic, red chillies, chilli flakes, lemon juice, mayonnaise, honey, parsley, salt and fish sauce (if using) into a bowl. Whisk to fully emulsify the sauce.
Grilling the king prawns
- Light the bbq coal in a charcoal chimney. And then preheat the grill for at least 5 minutes.
- Give the grill grates a clean using a grill brush.
- Brush the prawns with a little oil or use an oil spray. Then place the king prawns directly over the hot grill grates.
- Flip every minute.
- Continue to flip every minute until the prawns are charred. Depending on the heat of your grill, cooking the prawns should take around 4 to 5 minutes.
- Remove the king prawns from the skewers and add to the chilli and garlic sauce. Toss to coat the prawns. Check for seasoning and add salt, as required. Serve piping hot.
