Turkish style grilled chicken wings: Kanat Izgara

- 1 BBQ
- flat metal Turkish skewers
Ingredients
- 1 kg chicken wings
- ½ tsp table salt
- 100 g Turkish pepper paste, biber salcasi
- 1 tsp garlic paste
- 1 tsp Isot, Urfa pepper you can use pul biber (Aleppo pepper) too
- 1 tsp paprika
- 50 ml oil
- ½ handful flat leaf parsley
Instructions
- We are making Turkish-style grilled wings, Kanat Izgara
- Dry brine the chicken wings with ½ tsp table salt per kg.
- Refrigerate for at least an hour.
- Make the Turkish wings marinade using Turkish pepper paste, garlic paste, isot, paprika, oil and minced parsley.
- Marinate the wings just before they go onto the grill.
- Thread the chicken wings onto flat Turkish skewers, ensuring that the skewers pass through the meat in between the bones for flat chicken wings. For drum chicken wings, skewer them from the top to tail.
- Fire up the BBQ charcoal. Add the coal in an even layer and drop the BBQ grill to the lowest setting, then place the chicken wings directly over the coal.
- Flip the chicken wings regularly, making sure the wings are not burning.
- Cook slowly until the wings are 80% cooked.
- Using a sharp knife make cuts in the chicken wings. This step increases the surface area. You have the option to complete this step directly on Turkish bread. As the chicken fat and spices meld together, they infuse the bread, creating a tantalizing combination! This flavourful, indulgent bread is commonly enjoyed alongside mangal dishes and is irresistibly delicious.
- Repeat on the opposite side.
- Cook the chicken until they reach an internal temperature of 75°C
- Wow, they look as good as an Ocakbasi restaurant.
- Serve with bulgur wheat, grilled onion salad and fat-laden bread.
